When it comes to breakfast foods, there are so many options, but somehow, we still get stuck in a rut. Try these 5 breakfast sandwiches to mix things up and make you excited to get out of bed in the morning.
1. Peanut Butter Banana
Peanut butter banana is one of my favorite food combinations, and it goes so well on toast. Simply toast your favorite bread, spread natural peanut butter on top, and add your sliced bananas. I like to use Ezekiel Bread for mine and add a little extra nutrition by sprinkling it with chia seeds and cinnamon. This works best as an open-face sandwich because the bananas tend to slide around otherwise. Try it today!
2. PB & J
3. Cinnamon Apple
Now this breakfast sandwich may seem a little more sophisticated, but it is seriously delicious! I love this one on a bagel, because it gives you the perfect ratio of bread to toppings. Start by lightly toasting your bagel and add sliced apple on top (you may want to butter your bagel as well but you can make it either way). Place a piece of your favorite cheese on top and microwave for 30 seconds or until the cheese has melted. This will help your apples stay in place. Then, just sprinkle with cinnamon and either a little stevia or raw sugar. Trust me, you won’t be able to get enough of this breakfast sandwich! It’s perfect for those that love the salty/sweet combo!
4. Bacon, Egg & Cheese
This one is a common fast food breakfast sandwich, but making your own version at home is so much better for you and takes no time at all. Plus, you can make them ahead of time and freeze them for busy mornings. I love this one on bagels or english muffins. Top 2 slices of all-natural turkey bacon with a scrambled egg and a slice of cheddar cheese. Melt the cheese on top for an extra yummy treat! If you’re making them ahead, I would recommend using a bagel or english muffin, and an egg cooker or mold to get your scrambled egg into a solid disc. It makes assembly and storage a little easier.
5. BLT (sort of)
The idea for this one comes from the classic BLT sandwich. Except, instead of using lettuce, you mash half an avocado and spread it on your toast or english muffin. Top with turkey bacon, a “dippy egg” (or an egg cooked over-easy), sliced tomato and shredded mozzarella.
Tip: For the on-the-go version, I recommend swapping the tomato for a little organic ketchup because the tomato can slide around and get a little messy. Make it in no time and enjoy an energizing breakfast.
