5 Easy Christmas Cookies For A Healthy Holiday Season

This Holiday Season, we’re gonna do everything we can to enjoy the festivities, but keep it a little easier on the waistline so we’re not still “celebrating” our weight gain in the new year.

Snowball Cookies

Ingredients

  • 4 cups shredded, unsweetened coconut
  • 1/4 cup granulated coconut sugar
  • 1/2 cup coconut milk
  • 1/4 tsp. vanilla extract

Instructions

  1. Put shredded coconut in a blender or food processor until it is finely shredded.
  2. Add coconut sugar, coconut milk and vanilla. (If dough is crumbly, add a little more milk until you get dough thickens)
  3. Wet hands and take a tablespoon at a time of the dough and form it into a ball.
  4. Press it onto a cookie sheet to flatten it a little and repeat until all your dough is gone.
  5. Refrigerate to firm cookies and enjoy! (no cooking required!)
