Healthy Honey, Peanut Butter Cookies
Ingredients
- 3/4 cup coconut flour
- 2 cups creamy, natural peanut butter
- 1/2 cup honey
Instructions
- Add peanut butter and honey to a microwave-safe bowl and microwave in 30 second increments until just melted.
- Mix in the coconut flour until a thick dough forms.
- Line a baking sheet with parchment paper.
- Using your hands, roll about a tablespoon of dough at a time into a ball and place on the lined baking sheet.
- Press each cookie down twice with a fork in a criss-cross pattern and refrigerate until firm.
- (Cookies will be a fudge-like consistency when done.)
