No Bake Pumpkin Gingerbread Balls
Ingredients
- 2 1/2 cups almond meal
- 1 Tbs. cake spice
- 1 tsp. cinnamon
- 1/4 tsp. ginger
- 1 Tbs. molasses
- 1/4 cup pumpkin puree
- 2 Tbs. brown rice syrup
- 1/2 cup powdered sugar
Instructions
- Place almond meal, cinnamon, ginger, and cake spice into a medium sized bowl and mix.
- Add pumpkin, molasses, and brown rice syrup and mix together thoroughly.
- Place powdered sugar in a small bowl.
- Scoop 1 tablespoon of mixture into your hand and form a ball.
- Roll each ball into the powdered sugar and place on a lined baking sheet.
- Refrigerate and eat!
