I just had to include buckeyes for my husband. Though they may not seem like a typical Christmas cookie, in mine and my husbands book, they qualify!
Ingredients
- 1 cup all natural peanut butter (the runnier kind)
- 10 medjool dates, pitted
- 1/2 cup of your choice chocolate protein powder
- 1 Tbs. cocoa powder
- 2 Tbs. maple syrup
- pinch of salt
- 1 Tbs. coconut oil
- 1/2 cup dark chocolate chips
Instructions
- Place peanut butter, dates, protein powder, cocoa powder, maple syrup and salt in a blender and blend until you've broken down the dates and consistency of the mixture is dough-like.
- Scoop out a tablespoon of dough at a time and roll it into a ball with your hands.
- Place each ball onto a parchment lined cookie sheet and place in the freezer.
- Once you've finished making the balls, mix your coconut oil together with your chocolate chips and microwave in 30 second increments until just melted.
- Once the balls are firm, remove them from the freezer and dip them into the chocolate and back onto the cookie sheet.
- Add holiday sprinkles if you'd like before the chocolate sets.
