Ingredients

  • 1 lb. ground turkey or venison
  • 3 large brown eggs
  • 2 russet potatoes, peeled and diced
  • 1/2 vidalia onion, peeled and diced
  • 1 tsp. sea salt
  • 1 tsp black pepper
  • 1 tsp. garlic powder
  • 2 Tbs. water
  • 1/4 cup shredded mozzerella cheese
  • organic ketchup (optional)

Instructions

  1. Using a large frying pan, over medium heat, brown the ground turkey or venison until it is cooked.
  2. Take the meat and put it on a couple paper towels to soak up some of the grease.
  3. Put the frying pan back on the stove and add your diced onion, diced potato, salt, pepper, and garlic powder.
  4. Add 2 Tbs. water and put a lid over the frying pan to steam and soften the onions and potatoes. (If your potatoes are sticking to the pan, add more water, or turn down your heat)
  5. Once the potatoes and onions are cooked, add the ground meat back into the mixture and combine well.
  6. Push the mixture over to one side of the frying pan to create an opening and crack your 3 large eggs into the pan.
  7. Scramble the eggs and once they are completely cooked, combine them with the ground meat, potato and onion mixture.
  8. Scoop the mixture into a bowl and sprinkle with shredded mozzerella cheese.
  9. **Optional** Add ketchup if you want. (That's how we like it)
