  • 1/2 tsp. parsley
  • 1/2 tsp. oregano
  • 1 Tbs. lemon juice
  • 2 Tbs. organic butter
  • 5 roma tomatoes, diced
  • 2 medium cucumbers, diced
  • Dressing:
  • 1/2 cup plain greek yogurt
  • 2 Tbs. lemon juice
  • 1 Tbs. vinegar
  • 1 1/2 tsp. stevia
  • 1/4 cup olive oil
  • 1 tsp. sea salt
  • 1 tsp. black pepper
  • 1/2 tsp. dried dill

Instructions

  1. Start by preparing the brown rice according to package instructions.
  2. Once the rice is fluffy, add the canned chicken, salt, pepper, garlic powder, parsley, oregano, lemon juice, and butter and set aside.
  3. Next, make the dressing by combining all ingredients well in a medium-sized bowl.
  4. Plate the greek bowls with the chicken, rice mixture on the bottom, the diced tomatoes and cucumbers on top and then drizzle the greek dressing over everything.
