Chocolate chip cookies are one of America’s favorite desserts, but why make or eat something that is just going to make you feel guilty later. Instead, try these healthy chocolate chip cookies, that are gluten free, low-carb, low sugar and oh so delicious! I dare you to just eat one! (Even though you don’t have to…)
Ingredients
- 1/2 cup softened grass-fed butter
- 1/3 cup stevia
- 2 large eggs (preferably farm fresh or free-range)
- 1 Tbs. vanilla extract
- 2 cups blanched almond flour
- 1/2 tsp baking soda
- 2/3 cup Lily's dark chocolate chips
Instructions
- Preheat oven to 350 degrees and spray baking sheets with nonstick spray, preferably coconut oil.
- Mix together almond flour and baking soda and set aside.
- In a separate bowl, mix together butter and sweetener in an electric mixer, or with a hand-mixer.
- Once blended, add eggs, one at a time until they are combined well, and then beat the mixture for 1 minute.
- Mix in the vanilla extract.
- Add the dry ingredients (almond flour and baking soda) and mix well. Take a spoon or spatula and fold in the chocolate chips to the mixture.
- Scoop the batter with a small cookie scoop or with two small spoons onto the baking sheets and bake for 7-10 minutes, and then rotate your cookie sheets from top to bottom (and vice versa) and bake for an additional 5-7 minutes, depending on your oven.
- Cool cookies on a cooling rack and enjoy!
