Nachos are so addicting, but they are not often very good for you. My husband and I had tried them as an appetizer at a local restaurant that is known for healthier dishes and were hooked! We instantly wanted to recreate our own version so we could eat them much more often at home.
Not only are they healthy, but they are super filling, too! Half the time, neither one of us can finish our plate. And they’re very inexpensive! Easy, healthy, cheap and filling? What more can you ask for?!
Ingredients
- 1 lb. ground turkey
- 1 packet organic taco seasoning
- 1 bag organic blue corn tortilla chips or other organic tortilla chips
- 1 can organic, low-sodium corn
- 1 can organic black beans
- 1 jar organic salsa
- 1 8 oz. bag shredded taco cheese
- optional: All-Natural Homemade Guacamole
- optional: fresh, sliced jalapeño peppers
Instructions
- Brown the ground turkey in a frying pan until fully cooked.
- Add taco seasoning according to package instructions.
- Spread a layer of the tortilla chips down on a large plate.
- Add the taco meat in a layer on top of the chips.
- Layer a few spoonfuls of the corn and black beans on your chips, depending on your preference.
- Add a generous layer of shredded taco cheese on top of the nachos and microwave for 30 seconds, or until cheese is melted.
- Top with a few scoops of organic salsa and homemade guacamole.
- Enjoy!
Tips: These nachos are super easy to make and you can substitute any of the ingredients for others, or add whatever toppings you want to them. We also like to add greens, fresh cilantro, or other vegetables to ours from time to time, but this is the basic recipe.
