Healthy Picnic Macaroni Salad

Macaroni salad is one of my favorite foods! I prefer to make my own though, so that I can make it gluten free, but this version is my absolute favorite! I got the idea to add avocado from Shannon at Yup! It’s Vegan! It’s a great way to make your salad even creamier without the added preservatives and chemicals. Enjoy!

Healthy Picnic Macaroni Salad

Ingredients

  • 2 cups gluten-free macaroni
  • 1 avocado, mashed
  • 1 tsp. lemon juice
  • 1 tsp honey
  • 2 Tbs. yellow mustard
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 tsp. garlic powder
  • 1/3 cup diced celery
  • 1/3 cup diced red bell pepper

Instructions

  1. Cook the macaroni according to package instructions and allow it to cool.
  2. Mix the remaining ingredients together in a large bowl.
  3. Pour the dressing mixture over the macaroni and mix well.
  4. Adjust with salt and pepper to taste and enjoy!

Tip: I like to use Now Foods Quinoa Macaroni Pasta, because not only is it gluten free, but it’s made from quinoa which is packed with protein and has tons of other health benefits too. Some gluten free pastas, especially the cheaper ones are made from corn and aren’t all that healthy for you, regardless if they’re gluten free.

There are many different types of gluten free pasta, made from a variety of ingredients, including corn and brown rice. Try different brands and see which ones you like. After all, you can use any type of pasta in your macaroni salad. Enjoy!
